Slow Cooker Pork Roast with Brandy


Is it Sunday yet? I have here a very tender pork roast dish that I cooked in the slow cooker for 8 hours which is lightly flavored with brandy and juniper berries. For years, I had been cooking this pork roast in the oven but this time, I turned to the slow cooker for a change. The only difference is that the sauce from the slow cooker is watery whereas when it is cooked in the oven, it is thicker. To make the sauce thicker, just simply recook the sauce with flour at the end.


Sunday meals are more special in most houses because there can be more time to dedicate ourselves in cooking. In my house, sometimes I do get to exert more effort in more elaborate dishes or there are also times when I wave the white flag, close the kitchen and declare it a Lazy Sunday. In this case, I can do half-half. With only half of the work I usually put in, this delicious Sunday dish comes out as good as it comes from the oven. Oh yeah, and there's no dirty oven either. If you want to have it for Sunday lunch, prepare it the night before, before you turn in for the night and just let the slow cooker go automatically to warm until you wake up like what I sometimes do with slow cooker dishes.
