Filipino Chicken Egg Noodle Soup (Chicken Mami)


Sigh, it is another cold windy day. Very early this morning, I stood up to combat the wind and cold to take out my dog. I was sleeping snugly in my warm bed but since I am a light sleeper and I know my dog's ungodly hour ritual very well, I heard him walking towards our room then he stalled at the doorway, choosing whether to wake me up or my husband. I was the obvious winner. This morning was still very windy and chilly like the past days and it was a good thing that my dog himself wanted to go back inside the warm house immediately after doing his doggy things.

I gave him his doggy snack while I looked at our dark kitchen wishing for a hot early morning snack myself. I was working on this post before I went to bed and thoughts of hot chicken mami immediately flooded my mind. It was the perfect moment. How I wish I had it in front of me though! Defeated, I just had a glass of water (sigh) and I went back to bed like what my dog did. It was too early anyway to think of food.


Because the Philippines has a tropical climate, 2 existing seasons of wet and dry (high level of rainfall and very low level of rainfall) and 365 days of hot humid days, a bowl of hot soup is not something that you would really wish for when it is already sweltering hot especially in the dry season. Hot soups like chicken mami is actually eaten more when the wet season arrives, with a couple of degrees dropping for a lightly fresher temp.


Chicken mami is a simple soup made of homemade chicken broth (use the store-bought broth if you don't have the time to do this), shredded chicken, egg noodles, cabbage, spring onions, carrots (some put them some don't), hard boiled eggs and toasted bits of garlic which is what sets it apart from other kinds of soups. Then you can also drizzle it additional fish sauce and lemons depending on your taste. Personally, I like the kind of soup that bites with flavors so I add more condiments.
