Easy Mint Yogurt with Strawberries


Yesterday was the first day of silence at home. I enjoyed it - doing nothing, in spite of all the plans I had to do as soon as the kids left for school. I had such a long list of pending things to do but I just dropped everything for a couple of hours of relaxation. But yes, at the back of my mind, there was this voice reminding me to do this and that until finally, I tackled what I had to tackle which was laundry. The best part is to put everything in the washing machine and the chore gets worse as you take them out to hang. I have mountains of dry clothes waiting to be ironed that never get flattened. That only means that ironing is my worst enemy. Is there actually anyone who loves ironing? I wonder.

I grew up being told continuously that breakfast is the most important meal of the day because it's the first food you get. I have always escaped breakfast ever since I was young to gain a minute or two more of sleeping time and that has always made my Mom frustrated. Who wouldn't? Because now, my own daughter is like me.


I find it strange because breakfast is actually my favorite meal of the day when I have the time to prepare. There are also times when I actually can't sleep thinking of the breakfast I will prepare the following morning. Like this one. You can prepare the mint syrup the previous night to make things fast and easy in the morning. Then in the morning, just mix the syrup and chop the strawberries. It's worth waking up to, I'm telling you. And it's coming from a person who wouldn't budge from the bed unless there is something interesting to stand up to. Good morning!
