Breakfast Fried Rice with Bacon, Ham and Eggs


Growing up, I was told that breakfast is the most important meal of the day because that is where you get the nutrients to energize your body and mind to get through the first part of the day. And it takes extra effort because just to will yourself to get out of bed, wake up and start moving can take a crane's work to hoist you out of the morning cobwebs. I don't know about you but most of the time, I need a crane in the morning! I'm not really your all-smiles morning person. I'm the one you will notice dragging herself around a breakfast room. 


Because breakfasts are so important in my parents' house, my Mom never let me start my day without eating anything. And being in the Philippines, that something is something filling and much heavier than a piece of croissant. And that something is a complete meal of fried rice, sausage, dried fish or marinated meat. I'm not kidding. The idea of making fried rice in the morning was actually born from recycling leftover steamed rice from the previous night's dinner. It develops new life and amazing flavors especially because you can put whatever you want to which can also be leftovers. 

For this recipe, I created something more apt for breakfast, can also be eaten on its own (without sausages or other meats) because the rice itself is already mixed with ham and bacon then topped with eggs. Breakfast Fried Rice with Bacon, Ham and Eggs

Serves 4
Ingredients:

  • 3 cups cooked white rice
  • 1 cup cooked ham, diced
  • 1/3 cup bacon, diced
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • 4 eggs
Directions:
  1. In a large, dry saucepan over medium heat, fry the bacon.
  2. When the bacon is done, add the peas, and cook for about 8 minutes.
  3. Add the ham, rice and olive oil. Mix well.
  4. Season with the salt and pepper. Cover, and keep it warm.
  5. Over medium heat, bring a pot of water to a boil. Poach the eggs when the water is boiling.
  6. Serve the fried rice with the eggs on top.
