Pineapple and Chicken Fried Rice


Lately, I have been eating more Asian food that I usually do. Part of the reason why is because I had to create a series of Asian recipes. Of course, if they are cooked, then they have to be eaten too. Then the craving for more Asian dishes (even the ones that I am not obliged to cook) just overwhelmed me. My calamansi lemon trees are in full bloom again and when they are like that, I can only think of Asian dishes with dipping sauces. This rice doesn't require a dipping sauce but the meat or fish I eat it with definitely needs it.


This Pineapple and Chicken Fried Rice is one of my favorite rice mixtures. It has all the flavors that I am looking for in one spoonful. The sweetness & slight tartness from the pineapples give a lovely balance with the light saltiness of the the rest of the ingredients. It may seem strange but it is really worth trying. When I have mixed or fried rice, I accompany it with meat or fish without so much sauce because the rice is already loaded with other ingredients, so something simple is needed. My family enjoys this rice as is, without any additional meat or fish to go with it and sometimes, I do eat it the same way too. If you try this simple and tasty recipe, enjoy!

Pineapple and Chicken Fried Rice

Serves 4
Ingredients:

  • 1 whole fresh pineapple, cleaned and dried up
  • 1 cup diced fresh pineapple
  • Olive oil
  • 1 cup diced chicken
  • 4 tablespoons soy sauce
  • Ground black pepper
  • 1 cup frozen green peas
  • 1 cup diced cooked ham
  • 3 cups cooked white rice
  • 1 tablespoon sesame seeds (optional)
Directions:
  1. Slice the pineapple vertically in half. Using a sharp knife, remove the pulp.
  2. Dice the pineapple, measure out 1 cup to use in this recipe, and set aside the rest for other recipes.
  3. In a large saucepan or wok with olive oil over medium heat, sauté the chicken. Add 1 tablespoon of the soy sauce, and sprinkle on some black pepper. Cook until all the sides are cooked through.
  4. Add the green peas, and cook with the chicken for 5 minutes.
  5. Add the cooked ham and the pineapple. Cook for 2 minutes.
  6. Add the rice, mix well with the other ingredients, cooking for another 3 minutes.
  7. Pour in the remaining soy sauce, and sprinkle with some pepper and sesame seeds, if using.
