Quinoa Salad with Grilled Vegetables


When quinoa became a sensation, everyone, including me, started using it everywhere. One of the first recipes where I used it in a unique way (that became quite popular) was in a smoothie. When I had some leftover cooked quinoa in the fridge and I needed something to thicken my Chamomile, Strawberry & Quinoa Smoothie, I looked at the quinoa resting in its bowl and I thought, why not? That 'why not' gained me quite a number of ripples in my blog. It is also one of my favorite smoothies because it is healthy, subtle and delicate.


Quinoa has an incredible overall nutrient richness. In fact, being considered a superfood, United Nations recognized 2013 as The International Year of  Quinoa. It was a year of awareness about this pseudocereal that provides high protein, antioxidants, manganese, folate, magnesium, and a whole lot more nutrients packed in every single grain. 

I used quinoa in a lot of recipes and one of my favorite ways is to mix it with vegetables. This simple quinoa salad mixed with grilled fresh vegetables and blanched peas is not only delectable but also boasts of being a powerpack of vitamins and minerals.
