Pasta with White Fish, Tomatoes and Zucchini


Swordfish and paccheri, I like putting them together in a pasta dish. Paccheri are a kind of pasta that are shaped like big tubes which can either be stuffed or just used as regular pasta. In this dish, it's delicious just mixed with the swordfish and vegetables and you don't even need to exert so much effort because this dish is so easy to prepare.

Swordfish is quite expensive here so I don't buy it as often as I buy sole or sea bream. When I do, I like to cook it where its flavors are maximized. And the best ways I found are just two. Grilling it with salmoriglio. Salmoriglio is a condiment mixture of fresh lemon juice, extra virgin olive oil, dried oregano and garlic. The other way I cook the swordfish is by mixing it with pasta like this one. Just a quick sautè in the pan with tomatoes, zucchini and white wine, really, the flavors are amazing.
