Easy Skillet Lasagna


Lasagna is a classic Italian pasta dish that takes time and effort to make. But over time and the changing of ingredients, like ready lasagna sheets that don't require pre-cooking, preparing it became easier. When I make my usual Lasagne al Ragù (with tomato meat sauce) at home, it takes me time to prepare it and I occupy the kitchen with different pots and pans, bowls and wooden spoons. That's because I cook the ragù in one pot, another pot for the bechamel sauce and another one for the boiling of the lasagna sheets (if I am using the dry ones).  Then spread out on the table are clean dishtowels to dry the cooked lasagna sheets, bowls of grated Parmigiano Reggiano and butter too. In a way of saying, my kitchen comes out quite a mess!


Shortcuts are frowned upon by purists but sometimes they are the solution to busy moms like me. Lasagna is usually reserved for special dinners because aside from the time and effort it requires in making, it is also quite heavy. The bechamel sauce is loaded with milk, butter and flour while the ragù has beef and an abundance of Parmigiano Reggiano. The ingredients are not unhealthy, but altogether, the calories can be quite high.


So here I have a 30-minute quick and easy, no-bake skillet lasagna that is also healthy. Instead of beef, I used a leaner kind of meat which is turkey, then I also used fresh tomatoes. In place of the butter, I used extra virgin olive oil and I dropped the bechamel sauce for some low-fat mozzarella cheese. Parmigiano Reggiano or Parmesan cheese is considered a healthy kind of cheese in Italy that is full of calcium so I retained it for the taste and the health benefit it gives. And 3 other great things are, you only need one skillet to cook everything (oh wow, there goes my dishwashing duties!) which means no mess in the kitchen, you can have it in just half an hour of cooking and it doesn't require baking!
