Slow Cooker Chicken and Bean Stew


Sometimes spur-of-moment things can be incredibly great. I am an impulsive person so with just one snap of the fingers, I can just make a random turn and drive to the opposite direction. I love surprises, random acts and doing things that make my children jump with excitement. So yesterday, when I picked up my daughter in kindergarten at lunch time, I had the sudden thought of going to the mall, have lunch there and go girl-shopping with my little one. Today was the day because she was all smiles when I greeted her at the door of the school.

Quality time between me and my kids is becoming rare. There is just too much flurry in my schedule to permit myself to sit down and have a decent time with them. With a few hours with her, I realized that I actually needed that little break with my growing daughter in front of me. 



All I can say is, thank God for slow cookers! I left the house with the slow cooker cooking the chicken and beans I was meaning to serve for lunch. I wasn't worried because it would just shut off the cooking and keep the food warm. That is one thing that I am so grateful about with them. Dishes that require hours of cooking time don't get disrupted whereas cooking on the stove has to be stopped when no one is manning it. Once, when I had to cook a pot of beef stew that needed to be cooked for hours, I had no choice but to turn off the stove twice everytime I had to go out to pick up my kids in school. 

Dinner was the protein-packed Slow Cooker Chicken and Bean Stew that I had left cooking while I was out. It was tasty and tender.  It's one of the slow cooker chicken recipes that I love putting together because not only is it very healthy but importantly, the kids like it.
