Since its inception in September 2020, Rastrello Cucina & Giardino has swiftly emerged as a paragon of culinary brilliance in the region. Conceived from an idea of the Wassmanss, visionary couple from the US and Germany whose initial dream of cultivating an olive farm in the heart of Umbria evolved into Rastrello Boutique Hotel and the bistrot. Rastrello's ambiance exudes an aura of refined elegance. Rustic stone floors and terracotta ceilings harmonize seamlessly with contemporary furnishings and minimalist accents, bestowing upon the space an ambiance that is at once timeless and modern. Outside, the restaurant's panoramic garden terrace offers a captivating tableau of the surrounding landscape, providing an enchanting backdrop for an unforgettable dining experience.



At the culinary helm of Rastrello is Nicola Fanfano, a chef whose culinary ideology orbits around simplicity, reverence for nature, and homage to heritage. Nicola curates a menu that exalts the seasonal bounty of Umbria and Tuscany drawing inspiration from the fecund tapestry enveloping Panicale. Vegetables are the protagonists in his kitchen, which he harvests from Rastrello's own gardens daily. In addition, the olive oi used is from the production of the family itself. The fish is gathered from the nearby Lake Trasimeno, while meat is procured from the two adjoining regions, renowned for their top-quality meat selections.


His concept aims to deliver a sustainable culinary experience while upholding genuine tastes and ingenuity. The menu presents dishes with minimal ingredients yet abundant in the innate essence of each ingredient. His culinary principles revolve around the pillars of simplicity, reverence for nature, and honoring historical heritage. From delectable Chianina to delicate fish delicacies, every dish tells a culinary tale infused with the region's profound gastronomic heritage.

The menu (between €12 to €19 each), which changes every month, features straightforward options such as platters of locally-sourced charcuterie and cheese, bruschette and crostini topped with garden vegetables, succulent Marengo beef burgers, homemade pasta, salads, different fish meat dishes and bowls of fresh garden vegetables served with organic cereals. In addition to showcasing the chef's culinary philosophy, the standout dishes include the homemade spaghetti with white beef ragù, mint, and broad beans served with Parmigiano Reggiano and aglione fondue, as well as the simple yet fresh and flavorful bruschette and crostini topped with garden vegetables, both highly recommended
