Foil-Baked Bananas with Chocolate and Rum


It's mid-morning and the kitchen smells heavenly. Why shouldn't it, with the oven roaring hot with bananas mixed with chocolate, rum and cinnamon baking inside. Can you imagine the smell emanating from that heat? It's one of those baking scents that makes the house feel homey like a waft of coziness embracing you. That is how I always imagined my house to be, where the kitchen stars as the heart of the house, where the family gathers and stay together.


Yes I know, it's like a storybook from the elementary days with a perfect family set-up (mom, dad, son, daughter, dog kind of thing) but it's nice to picture something perfect in your mind sometimes. I grew up with that picture in mind and I have the exact characters in my life right now. Although it is not as perfect as how those stories go, I am still able to contain the kitchen as the main part of the house. The books didn't mention about siblings bickering at each other over meals, dogs stealing food from the plates nor kids crying because they don't want to eat their greens but hey, life can't be that perfect. Only baking smells can be perfect. Like this one.

Let's speak about this dessert. If you like the ingredients that I put together and how it looks like, then I will have to tell you that this is so worth your time and effort especially when you have company over. To be honest, there really is no effort involved because you will just have to put together a few ingredients with the bananas in a foil pack and bake it for a few minutes. That's practically the only thing you will have to do and you will be rewarded by such a delicious dessert. For the ice cream, I love vanilla on it because it doesn't steal the attention from the flavors, rather, it complements everything.

Foil-Baked Bananas With Chocolate and Rum

Serves 2
Prep time: 10 minutes | Bake time: 10 minutes | Total time: 20 minutes
Ingredients:
  • 2 big or 4 medium bananas, peeled and sliced
  • 2 tablespoons rum
  • 2 tablespoons chocolate, finely chopped
  • 2 tablespoons brown sugar
  • Ground cinnamon, to taste
  • 2 scoops vanilla ice cream (or other desired flavor)
Directions:
  1. Preheat the oven to 400 degrees F.
  2. Place the bananas on a sheet of aluminum foil.
  3. Pour the rum on top of the bananas, and then add the chocolate, cinnamon and sugar.
  4. Seal the aluminum foil around the bananas.
  5. Bake the bananas for 10 minutes.
  6. To serve, unwrap the aluminum foil, and top with vanilla ice cream.
