Honey Sriracha Chicken


Sweet and spicy at the same time. It has all the Asian prints in them. This Honey Sriracha Chicken is a hit in my own table. Chicken, for that matter is always well accepted by my kids and on a step closer to healthier options, they even prefer the white meat. Lucky! Soy sauce, honey, sriracha, ginger, lime are the main ingredients that work together in this simple and delicious dish. It is a kind of chicken meal that is perfect for a weeknight dinner. It requires easy ingredients that you most probably already have at home and cooking doesn't require so much expertise in the kitchen. It's really great when you are pressed for time.


My daily routine has changed a great deal after both of my kids started school. Even if both stay in school the whole day, my 5th-grader goes home for a very quick lunch before heading off to another school for some private lessons. He has a full hour break but traveling time between two schools in different towns leaves us just about 20 minutes of spending it eating. That means, I have to have the super powers of keeping everything in the right schedule without losing a minute. I am generally quite bad with time management but I have been coping quite well for the past two weeks. I have to congratulate myself on that.


For the rest of the school year, I have to rely on recipes that my 5th-grader can readily eat, fast and easy to prepare. This recipe is one of them. It's been tried and tested and it will keep on having repeats in my kitchen. I like this served on rice (whole grain if possible sometimes) because that's just how it is like in Asia. Rice is staple and the main course has to go blend well with it.
