It is also very healthy because the ingredients are mainly squash, vegetable broth and chicken. If your kids eat squash, then this can be a meal to serve next time to your family. I am still working on my own kids to eat squash and since they both love chicken, this is a great dish to push them to accept squash in their diets. With the presence of the chicken, it helps making them eat it easier.
Depending on what kind of consistency you want, just adjust the amount of broth that you put. Since the slow cooker does not make the liquid evaporate, the consistency of this dish is slightly on the soupy side but I prefer it that way because the sauce is very tasty and good and in the Italian way of eating at home sometimes, fare la scarpetta (to swipe your bread on the plate to get the sauce) is in order.
