The Healthiest Sicilian Winter Citrus Salad


It's been ages since I shared a recipe at Apron and Sneakers. My attention had been diverted to other branches of enogastronomy. Truth be told, I have a very long list of  recipes in the computer waiting to be shared. Let me start today with this extremely simple citrus salad recipe that I learned yesterday from my trusted Sicilian citrus fruit vendor yesterday. I usually prepare a much simpler version of oranges, extra virgin olive oil and salt but this one is very good. It is very easy to prepare and can be eaten for lunch or dinner while the fruits are in season when they are at their best - sweet and exploding with nutrients. Citrus fruits, as we all know are significantly rich in vitamins like fibers, vitamin B, magnesium and most especially vitamin C. With the cold of the winter, we need it the most.

Below is the recipe which you can adjust or modify according to your taste. The citrus fruit I used are biological and untreated and extremely good. Good and healthy results always come from using ingredients of good quality from the right season. Buon appetito!




The Healthiest Sicilian Winter Citrus Salad

Serves 2
Ingredients:
  • 6 salted anchovy fillets
  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon freshly-squeezed lemon juice
  • 1 fennel, sliced
  • 1/4 cup pitted olives, halved
  • 1/8 cup salted capers
  • 1/8 cup sun-dried tomatoes, finely chopped 
  • 2 small grapefruits, sliced
  • 2 oranges, sliced
  • 1/4 untreated lemon, very thinly sliced including the rind

Directions:
  1. For the salad dressing, in a small bowl, mix the anchovies, extra virgin olive oil and the lemon juice. Set aside.
  2.  In a salad bowl, mix the fennel, olives, capers, sun-dried tomatoes and the salad dressing.
  3. Add the slices of orange, grapefruit and lemon at the end.
