One-Pot Spaghetti al Pomodoro


When I was speaking with a friend once whose work life is a combination of traveling and running around her neighborhood (in those rare moments that she is home), I just realized how badly she needs alternatives for using her time wisely. That includes having home cooked meals that don't need elaborate and long preparations because with a life like that, the easiest and most possible option is always take-away. Perhaps it's more delicious than home cooked meals at times but healthwise, I would still go for the ingredients that I bought myself and put together in my pan.


When time is of essence, slow cookers and one-pot meals are gifts from heaven. Here, I am sharing the recipe of the traditional spaghetti al pomodoro (tomatoes) that I always cook for my family when we want to go for basic and simple Italian fare. Sometimes I use fresh tomatoes when I have some beautiful ripe and plump ones or canned tomatoes when I want be quick in the kitchen. I just want to remind you that the taste of your sauce depends on the quality of the tomatoes that you use. After years of brand trials, I have found the canned tomato brand that I trust for its quality and taste. It's Sardinian and it doesn't have a big production so I think finding it outside Italy is close to impossible. I even have a hard time myself in finding it here in Rome.


Thinking of the people who need to curtail their time in the kitchen, this one-pot pasta meal is so perfect for a weeknight dinner. Just put together the uncooked spaghetti, canned tomatoes, extra virgin olive oil and the rest of the ingredients together in one large saucepan, let it boil, cover, simmer and stir, then in under half an hour, the pasta is done. You will love how the smell of lovely Italian cooking will pervade your whole house. Buon appetito!
