I have been traveling a lot lately and as we all know, it entails packing, unpacking, washing, ironing, dealing with cranky kids and the list goes on. It's a One Woman Show! And I do it for four people and two animals (without the washing & ironing!). Yup, we are one big family and we are all finally home together once again.
When I am in a frenzy of putting order in my haphazard household after a trip, I tend to have very limited energy in whipping up something good to eat.
This is an old recipe that I created for SheKnows.com but it is something that I like coming back to when I want a quick and easy meal ready on the table in no time and without so much effort. The only work I do is grill the zucchini on the griddle. The rest is just putting them all together in one plate. The flavors are great and straightforward. A big piece of fresh mozzarella makes the salad pretty special. Another good way to enjoy it is to make a bruschetta with the same salad ingredients.
