On the iconic Via Veneto, where the echoes of La Dolce Vita still hum beneath the Roman sun, Allegrío continues to redefine the art of dining. Led by Creative Director Sabrina Corbo, this vibrant restaurant is more than a place to eat; it is a space where flavors become feelings and color meets cuisine. Each visit is a celebration of joy, memory, and human connection — the very essence of what Allegrío calls its Emotional Dining Experience.
Last year, Allegrío introduced an ambitious concept: the Inside Out menu, inspired by the beloved Disney-Pixar film that brought emotions vividly to life. The idea was an instant success, a heartfelt exploration of how food can make us feel, not just taste. This autumn, the team returns with a new edition of Inside Out by Allegrío, a creative collaboration between Executive Chef Daniele Creti and Master Pizzaiolo Giovangiuseppe Aiello, diving even deeper into the world of emotion through Italian flavors.
Here, every dish tells a story, every emotion has a flavor, and every bite — from joy to nostalgia — invites diners to rediscover themselves through food.
Inside Out: From Concept to Second Edition
Launched in October 2024, the first Inside Out menu redefined dining in Rome with its concept of emotional gastronomy, inspired by the Disney-Pixar film that brought human emotions to life. The idea to translate emotions into flavor resonated deeply, earning acclaim for its creativity and heart.

After its success, Allegrío now unveils a new edition of Inside Out, blending tradition, artistry, and imagination. The menu unites the talents of the kitchen and pizzeria teams for a truly multisensory Emotional Dining Experience, presented alongside the restaurant’s Signature and La Tradizione menus.
The space itself reflects this emotional philosophy. Its four themed rooms — Joyful, Lucky, Intrepid, and In Love — surround guests in color and warmth, creating an atmosphere that mirrors the journey on the plate. As Corbo shares: “We wanted to give voice to our emotions and express them through flavor — to turn memories, laughter, and even tears into dishes that make people feel something real.”

There’s La Passione (In Love), a silken egg pasta filled with stewed venison, bathed in butter and sage and finished with a velvety pumpkin cream — a dish that feels like a gentle embrace, delicate yet profound, and one of Creti’s most expressive creations. With La Rabbia (Anger), he channels intensity into pleasure: deviled chicken, boned and grilled, served with paprika-scented potatoes and fiery mustard sprouts. It’s bold, primal, and irresistible — the kind of dish that makes you lean in for another bite, infused with homely warmth but elevated by a master’s hand.

Then comes Il Coraggio (Intrepid) — the undeniable showstopper. Gyoza ravioli filled with savoy cabbage and pork, laid over black cabbage cream, and finished with Parmigiano and black truffle. The result is a seamless union of East and West, a conversation between tradition and innovation where no flavor overpowers another. It’s a dish of quiet confidence — proof that courage, in cooking as in life, lies in balance and harmony.

Pizza Chef Giovangiuseppe Aiello: Emotions in Every Slice
At the pizzeria, Master Pizzaiolo Giovangiuseppe Aiello transforms simplicity into poetry. His menu (€5–28) moves gracefully between traditional Neapolitan pizzas, the house-signature Matta, a playful fusion of Roman crispness and Neapolitan softness, and oven-fried creations that blur the line between street food and fine dining. Each pizza, like each emotion, carries its own rhythm: familiar yet unexpected, balanced yet bold.

Aiello’s pizzas are guided not only by technique but by memory and feeling. The Neapolitan pizza inspired by Joy bursts with layers of tomato textures—sweet, tangy, roasted, and confit—capturing the warmth of a Roman afternoon. It is light yet satisfying, a reflection of Aiello’s ability to find happiness in balance and restraint. Then there is Nostalgia, the pizza that lingers. Creamy blue cheese and smoky undertones meet the gentle sweetness of roasted pumpkin, creating a flavor that is both comforting and contemplative. It tastes like remembering something you never quite forgot, a pizza that feels like home even if you’ve never been there before.

Across the menu, emotions take form in dough. Anger bites back with spice, Fear smolders in dark, charcoal tones, while Courage and Love find expression in daring combinations that reveal Aiello’s quiet precision and intuition. His pizzas don’t shout; they resonate, each slice an echo of emotion shaped by fire and feeling.
To end the experience, Allegrío’s desserts (€10–12) speak the same emotional language as the savory dishes. The Inside Out journey concludes where it began, in Nostalgia, with a classic tiramisù served in a cup. Delicate, creamy, and unapologetically traditional, it’s everything tiramisù should be—rich yet balanced, comforting yet refined—a sweet reminder that some classics never need reinventing.
