Named after Paolo’s mother, Ines, who moved from Veneto to Rome before settling in Tuscany, the restaurant reflects her spirit: a focus on fresh, seasonal ingredients, carefully selected wines, and an atmosphere where guests feel at home. Much of the produce comes from the restaurant’s own garden, with the remainder sourced from trusted local suppliers, following a “farm to plate” philosophy.
Dining and Atmosphere
The restaurant offers different experiences throughout the week. Mondays are dedicated to pizza, with fresh, locally sourced ingredients crafted into both classic and inventive pies. On Tuesdays, the Supper Club provides a curated dinner paired with selected wines. Wednesdays the restaurant is closed, reopening on Thursday with the cicchetti menu, a series of small plates meant for sharing, which continues through the weekend. Sundays include a relaxed brunch from 12:00 to 15:00. Menus may vary with the seasons, so it is recommended to check ahead.
The cicchetti menu features small plates priced between €5 and €12, including bruschette, classic parmigiana, cheese platters, pulled pork, meat skewers, carpaccio, and Chianina beef tartare. Guests can also choose from a variety of fried items and meatballs, offering a mix of traditional and contemporary Tuscan flavors. The setting adapts to the seasons. In winter, the lounge bar with a fireplace and modern seating creates a cozy retreat, while in summer, meals are served in the shaded garden.
The Emporio Shop
The shop highlights local Tuscan food and crafts. Visitors can find honey, stone-milled pasta, preserves, pecorino cheeses, cured meats, olive oil, and a curated selection of regional wines. Originally serving a local clientele, the shop now allows visitors to discover and take home a piece of Tuscany’s culinary and craft traditions.
