When you only have one shot in eating in a city that you are going to visit, it's cardinal to choose the restaurant that best represents the gastronomy of the area. In my trusted online restaurant guide, I quickly zoomed in on one. Il Tempio Del Gusto has seen three family generations dedicated to culinary art in its kitchen, almost perfect reviews from past diners and positioned right at the center of Spoleto. I had to try it.

The restaurant is located just a few steps away from Piazza del Mercato where the Fontana con l'Orologio (Fountain with the Clock) is, then it goes through the other side of the road which is right in Piazza Pietro Fontana. In this square, it is possible to dine al fresco during the warm months. With candles on the table in a beautiful Umbrian square, it's a stunning intimate setting for dinner.

In the kitchen is Chef Patron Eros Patrizi, the third generation of a family who have dedicated themselves in cooking. His cooking offers a dip in the Umbrian tradition with a big room for innovation, fantasy and creativity. His attentiveness doesn't falter from the ingredients that are sourced from local producers who respect the principles of Slow Food.

Being the only region in Italy without a coastline, Umbrian cuisine is known for its abundance of meat dishes, particularly pork, lamb and game. For its presence of fish dishes, the regional lakes and nearby seas supply the fresh fish.

The menu of Il Tempio Del Gusto is strongly influenced by the tradition of Umbria and created with the chef's imagination. There are ample entries of meat as well as seafood for the non-meat lovers. Vegetables are seasonal in the dishes and spun in optimum dishes. Along with the food, the wine selection is also prolific in very interesting proposals.

I've been there a few times, always with different people and in all of those times, the restaurant got compliments for the excellent food. Be it for lunch or dinner, it's an ideal place to dine and explore Eros Patrizi's kitchen proposals. I like traditional food but sometimes I like them explored and recreated too. And at Il Tempio Del Gusto, you won't be disappointed.
