No-Bake Strawberry Mug Cake


Because I am guilty that I went on a weekend of work - holiday in Umbria (without the kids, without the dog) while my work calender had been lighting up in big bright red lights, I am now imprisoned in my usual little world of computer and me alone time. Or I do try while my daughter hovers around me with little touches of "Ciao Mommy," as if to understand that I am really there beside her because my silence while working bothers her. I am here. It's just that I need silence and inspiration. Then from my archives, a picture of this recipe jumped out at me. It's time to go back to work.


How yummy can you get? It's like this No-Bake Strawberry Mug Cake was speaking with me through the pictures. Made with a mixture of cream cheese and Greek yogurt, the cheesecake itself tastes lighter and with 3 kinds of seeds and fresh strawberries, you can never say no to it. The calories are not outrageously high if you are curious and most of the ingredients I mixed in are fresh and natural.


Sunflower seeds are very high in Vitamin E and other important nutrients while flaxseeds are rich in antioxidants especially omega-3 fats. And did you that almonds are actually seeds, not nuts? I didn't know that until now. They are the seeds found inside the fruit and nutritionally, they are very good because they are very rich in monounsaturated fats, the same kind that you can find in olive oil. Just with the seeds alone, this cheesecake is already a winner with nutrition!


Then let's carry on with the rest of the cheesecake. Because it is in the middle of summer, who wants to turn on that oven? Not me, please! With this delicious dessert, just mix the ingredients by parts then refrigerate. Just take it out after it has been chilled. It is a great recipe to remember when you have guests coming over. And it will win them, I am telling you.
