Avocado Salad Sandwich


There goes the time, ticking so fast suddenly and sneaking up on me. For the longest time, I had been occupied with our luggage and other pre-trip essentials for our trip to the Philippines and suddenly, here we are already! The kids are done with their school (we requested an early dismissal for them), one by one our suitcases are zipped close and I accomplished the most challenging job - emptying the fridge and pantry from perishables. Planning our meals around the existing ingredients in my kitchen puts my mind to work more than usual because I have to mind what ingredients have to be used and their quantities.


I would usually make salads, pasta dishes and sandwiches because these three are the most versatile of all. This is the time when I discover new combinations and rely on old favorites. Avocado salad sandwich is such a simple sandwich that is always reliably delicious without putting the nutritional value at the back seat. It' very simple to put together and it actually takes less than 10 minutes to make.



If you love avocados, then you will definitely love this. I am a big fan of avocados and this sandwich is one of the recipes that I like to put together for a simple and easy lunch. And if onions don't bother you, don't forget to put some slices inside (but do get the mildest ones) because they matter in the overall taste. That's what I keep on telling my husband whenever I make his because he evades onions and he is missing out on the final touch of the sandwich. I use the very mild Italian red ones from Tropea because the flavor is so mild and great to put in salads and sandwiches.
