Slow Cooker Potato and Corn Chowder

As soon as I took out my slow cooker and placed it on the kitchen counter, I already knew that one of the first recipes that I would be making would be soups and stews. Just thinking of slow cooking made me think of how good they would be. And for that, I am on my second slow cooker recipe after a delicious Slow Cooker Beef Stew with Chickpeas.

Now that fall is arriving, warm thick soups are foremost in my kitchen. Since chowders are my favorite, I decided on a corn and potato chowder. I really have to admit that slow cookers make our lives easier especially when the recipe calls for long cooking and you just don't want to stay in front of the stove every few minutes to check its progress. So what do I do? I put everything together and start it in the morning as soon as the kids leave for school, I do my chores and by the time I pick up my daughter in the middle of the day, our lunch is ready and warm.

Do come back again because if you are into slow cooker recipes, I will be sharing more of them here. They are mostly healthy ones because I am creating recipes for Skinny Ms., a site dedicated to healthy living with recipes, tips and resources in taking good care of your body. You can find this Slow Cooker Potato and Corn Chowder recipe there. The good thing is, I made this a skinnier version because I replaced the cream with Greek yogurt. Check it out!
