Grilled Spicy Mediterranean Eggplant with Tomato Salad


Because there is an abundance of aubergines/eggplants right now, there's no better way to prepare a quick dish using them. Whether you eat them as the main dish or as a side dish, this will come out perfectly as a partner to meat and fish or as the protagonist in your meal with the simple tomato salad that this recipe comes with. It's one of my dependable summer recipes because it is very easy to make. I usually try to evade cooking in summer but in this case, I don't really mind the grilling part because whatever comes out of my warm kitchen is something that is healthy and light which is perfect for this season.


Mediterranean diet pertains to the traditional food and drinks of the countries surrounding the Mediterranean Sea. It has a high consumption of fresh produce like vegetables, fruits, legumes, olive oil and fish. In this recipe, I just grilled the aubergines then used a mixture of extra virgin olive oil, balsamic vinegar, garlic and herbs as the way to give them flavor. Along with the aubergines, a fresh salad of chopped tomatoes, olives and extra virgin olive oil that you can eat along with them completes the dish to such a healthy vegan plate.


Eggplants are highly nutritious vegetables that contain a potent antioxidant called nasunin. It is mostly found in the skin and this kind of antioxidant helps protect our brain cells from damages. With the addition of the other fresh ingredients, this recipe will be quite a hit to your health-conscious body and mind.
