Potato and Fish Wrapped Asparagus Rolls


There is a way to create something that has all the characteristics that we want in one dish. These Potato and Fish Wrapped Asparagus Rolls are healthy, fresh, delicious and easy to prepare. They're exactly how we want our next dish to be when we have guests coming or even better, for our next Sunday special with the family. You just need 3 main ingredients, 2 saucepans and a choice between cognac or vegetable broth to come up with these awesome rolls.


If you want to make it vegan, just skip the fish part and go on wrapping the blanched asparagus with thinly-sliced potatoes. Be it appetizer or main course, you will definitely love these. And fish or no fish, you will still love them. I love both versions. If you are undecided between alcohol or no alcohol, I would suggest the use of cognac (or replace with brandy) to give it a particular oaky hint. When cooking with alcoholic drinks, the alcohol does evaporate but not all. It always depends on how you cook them and for how long. This recipe should take away about 60% and leaves a rounder taste to the dish. So if you have kids eating with you, go for the broth instead.
