Living a Luxury Tuscan Dream - Dining at Ristorante Castello di Fighine

Ristorante Castello di Fighine. The setting is the splendid 11th-century Castello di Fighine which has been restored and refurbished by South African couple Max and Joy Ulfane to a luxury resort. It is a historic castle perched on a hilltop in San Casciano dei Bagni at 650 meters high which overlooks the scenic Tuscan countryside. There is an exhilarating excitement as the solitary road leads to the isolated fortress. It gives a silent pact between the imposing castle and pristine environment. A short walk upon entering walls takes you to the restaurant, blending with its surroundings. A terrace covered with roses and vines of wisteria on its trellis ceiling surrounded by the spectacular green surroundings is the backdrop of outdoor dining on warm, sunny days. While indoors, an ambience of a relaxing and elegant Tuscan dining room is accentuated by a white timber ceiling and terracotta flooring. In the sprawling premises are six apartments and villas that are individually decorated by Italian and foreign interior decorators where they attained a kind of Medieval atmosphere with all the comforts and luxury of the modern times.


The Ulfanes have entrusted the management of the restaurant to Chef Heinz Beck, the famous Executive Chef of the three Michelin starred Pergola Restaurant in Rome. With a firm hand on a high level of quality and the maintenance of the Michelin star, the chosen resident chef is Antonio Romano who started running the kitchen since the summer of 2020. His culinary path is linked to the figure of Heinz Beck who worked with him at the Pergola then as Sous Chef of Attimi by Heinz Beck in Milan. Prior to working at the Pergola, he worked at the Dinner by Heston Blumenthal in London. His lustrous career was marked by becoming a finalist at the San Pellegrino Young Chef 2020 of Italy and Southeast European Region.


The style of Chef Romano has evident use of sophisticated techniques, learned from working side by side with a great master. He seeks to enhance the local raw materials that he utilizes in most of his dishes and he makes the most of what nature offers during the various seasons which underlines their characteristics. The kitchen is inspired by the Tuscan tradition which is expressed by the chef's creativity and vision of modern cuisine. His dishes are distinctively balanced with clear and clean tastes that do not overlap each other.

 
The menu has proposals of mostly meat dishes and a number of fish and vegetarian options. Appetizers, pasta and risotto are around €30 while the main courses are around €40 and desserts at around €15 for the à la carte menu. There are two options for the Tasting Menu: €115 for the 7-course meal while €95 is the price for the 5-course meal. To best enjoy the tasting menu, there is also an accompaniment of wines at €60 for 5 glasses of different wines or €80 for 7 glasses.
