Dark Chocolate Rice Pudding with Candied Orange Peel


I know what my son will get a bar of Intense dark chocolate and orange when we enter the Lindt chocolate shop because it's the same thing that I would also get for myself. It's nice to share the same love of flavors with him. Or maybe not because as soon as I turn my back, the bar immediately disappears in his mouth. We like flavors that don't shy away from our taste buds. The strength of both dark chocolate and orange make a very interesting combination. Intense, really, that's the best word I can describe it.


Putting the combination of dark chocolate and orange in rice pudding is as spectacular as it is in the chocolate bar. It's loaded with two strong flavors that make every spoonful so enjoyable. With the addition of orange liqueur, it intensifies even more. It's that kind of rice pudding that makes an impact with its richness and I absolutely love it. If you are a dark chocolate and orange lover, well well well, welcome to the club.

Dark Chocolate Rice Pudding with Candied Orange Peel

Ingredients: 
Serves 2 – 3 
1 cup uncooked rice, like Arborio
4 cups milk
1/4 cup sugar
3 tablespoons candied orange peel, finely chopped, plus a few strips for garnish
3.5 ounces dark chocolate, coarsely chopped
2 tablespoons Cointreau or similar orange-flavored liqueur (optional)

Directions:
1. To a medium pot over high heat, add the rice, milk and sugar, and bring it to a boil. When boiling, reduce the heat to low, cover partially, and simmer for about 20 minutes or until the rice is tender with a creamy consistency. Stir occasionally.
2. Add the chocolate, 2 tablespoons of candied orange peel and the Cointreau (if using), and mix well until the chocolate has completely melted and is mixed with the rice.
3. Transfer to individual bowls, and garnish with the remaining chopped candied orange peel and strips.
